This handsome new 5 Star hotel Concepció by Nobis, takes its name from the street on which it is located, Carrer de la Concepció, slap bang in the centre of Palma. Occupying a building dating back some 500 years this fabulous conversion has at its heart the new talk of the town, Restaurant Xalest.
Situated at entry level there is a light and airy feeling as soon as you step through the door. Period features have been respected, such as the arched ceilings blending seamlessly with the on-trend sit-up bar stools, where you can enjoy a pre lunch or dinner drink while you peruse the menu. There is an unmistakable sense of Scandinavian cool.
Restaurant Xalest is headed up by chef Xema Álvarez who wowed judges at the 2019 TaPalma and won, beating 50 top chefs in the city. His menu at Restaurant Xalest offers a colourful array of Mediterranean tapas and signature dishes. His non-fussy approach ensures that this is a relaxing place to dine. Service is swift and knowledgable.

We tried the croqueta de jamón, tartar de atún – which was divine, the ensalada de tomate rosa — a refreshing pink tomato and garlic vinaigrette salad and the aubergine with honey, feta and apricots. There is a wide selection of local Mallorcan wines as well as an international choice.
Leave room for something sweet. We could not decide between the traditional Spanish crema catalana or the grilled torrija, so our waiter suggested trying the Torrija, which was very similar to a bread pudding, which is then topped with sugar, grilled to caramelise and served with ice cream. Wow. You have to try – delicious !
